Golden Salmon and Roasted Vegetables with Creamy Mustard Sauce
Season the salmon with salt and pepper and let it marinate.
Arrange the broccoli, zucchini, and carrots in a roasting tin. Add the olive oil, Italian herbs, Parmesan cheese, and garlic. Mix well.
Roast in the oven at 200°C / 400°F for 15 minutes.
Meanwhile, fry the salmon in olive oil until golden brown, then let it rest.
Add the salmon to the vegetables and continue roasting in the oven for another 10 minutes.
For the sauce, brown the onion and reduce. Add the cream, mustard, and Parmesan cheese. Let it simmer, then strain the sauce.
