Fried Chicken Caesar Salad Tacos

1. Prepare the Fried Chicken “Taco Shells”:

Slice the Chicken: Slice each chicken breast horizontally into two thinner cutlets. Then, pound the chicken cutlets with a meat mallet or rolling pin to about 1/4-inch thickness. This helps them cook evenly and become pliable for shaping.
Set up Breading Stations: In three separate shallow dishes, prepare the following:
Dish 1: Combine flour, salt, pepper, garlic powder, paprika, and cayenne pepper (if using).
Dish 2: Beat the eggs.
Dish 3: Place the breadcrumbs.
Bread the Chicken: Dredge each chicken cutlet in the flour mixture, ensuring it’s fully coated. Then, dip it into the beaten eggs, allowing excess to drip off. Finally, coat it thoroughly in the breadcrumbs.
Fry the Chicken: Heat the vegetable oil in a large skillet or deep fryer over medium-high heat (about 350°F/175°C). Carefully place the breaded chicken cutlets into the hot oil, ensuring they don’t overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and cooked through.
Shape the Taco Shells: Immediately after removing the fried chicken from the oil, carefully drape each piece over an inverted heat-safe bowl or between two heat-safe objects to create a taco shell shape. Allow them to cool and firm up in this shape.
2. Prepare the Caesar Salad Filling:

Chop the Lettuce: Wash and chop the romaine lettuce into bite-sized pieces.
Dress the Salad: In a large bowl, combine the chopped romaine lettuce, Caesar dressing, and Parmesan cheese. Toss well to coat.
Add Bacon (Optional): If using, crumble the cooked bacon and add it to the salad.
3. Assemble the Fried Chicken Caesar Salad Tacos:

Fill the Taco Shells: Carefully fill each fried chicken “taco shell” with the Caesar salad mixture.
Garnish (Optional): Top with croutons or extra Parmesan cheese, if desired.
4. Serve Immediately:

Enjoy your Fried Chicken Caesar Salad Tacos while the chicken is still warm and crispy.

Tips and Variations:

Homemade Caesar Dressing: For a richer flavor, make your own Caesar dressing using ingredients like anchovy paste, Dijon mustard, and fresh lemon juice.
Spice it Up: Add a dash of hot sauce or a sprinkle of red pepper flakes to the salad for a spicy kick.
Other Toppings: Customize your tacos with other toppings like diced tomatoes, avocado, or red onion.
Baking Option: For a healthier version, you can bake the breaded chicken instead of frying. Bake at 400°F (200°C) for 20-25 minutes, or until cooked through and golden brown.
Enjoy your unique and delicious Fried Chicken Caesar Salad Tacos!
