Preparation:

The only difference here is that once you have mixed all the ingredients and formed a ball, you need to Take 1/4 of the dough (200g) and add a touch of pink food coloring. To do this, place the 200g of dough back in the bowl of your stand mixer and continue kneading for a few minutes until the coloring is fully incorporated. This takes a little while, but that’s normal.
Let this pink ball rise in the refrigerator while you prepare the rest of your yeast puff pastry.
When you’ve rolled out your dough into a rectangle, just before cutting it into triangles, roll out the pink dough as thin as possible, to the same size as your rectangle of dough.
Then overlap the two doughs and press them together with a rolling pin.
Bake for 20 minutes, keeping an eye on the color.

These croissants are a huge hit at my house; my daughters don’t want anything else, you can imagine! In fact, I’m the same; I can’t stop making these anymore. ^^ And since you’re going to make your own croissants, they might as well be different from the ones you can find at any bakery.
