Every time I bring this to a party it is an instant hit

Instructions:
Shred the aged cheddar and smoked gouda cheeses and combine in a large mixing bowl.
Add the cream cheese and mayonnaise to the bowl. Mix everything until well combined. Distribute the chopped roasted red peppers evenly by adding them to the mixture and stirring.
Add the dry mustard and onion powder. If desired, a pinch of cayenne pepper will add heat. Combine all ingredients and mix until well combined. (Alternatively, you can use an electric mixer.)
To make the dip milder, just add some dry parsley and stir in. You can also skip this step if you want.
After the dip is well mixed, seal the bowl or place it in a container to keep it from drying out. Place it in the refrigerator for at least an hour, preferably overnight, to allow the flavors to combine.
To make sure the dip is properly mixed before serving, give it a quick stir. If you want, you can add more chopped roasted red peppers or parsley as a garnish.
Dip the veggies in pimento cheese and serve with tortilla chips, crackers, or whatever you like. Enjoy!
