Blend dates:
In a food processor, blend the pitted dates until they form a sticky paste.
Mix ingredients:
In a large bowl, combine oats, peanut butter, blended dates, chia seeds, vanilla extract, cinnamon, salt, and coconut (if using). Stir until fully combined. (If too dry, add a little more nut butter.)
Form balls:
Scoop about 1 tablespoon of the mixture and roll into balls.
(Tip: Lightly wet your hands to prevent sticking.)
Chill:
Place in the fridge for about 10 minutes to firm up — then they’re ready to eat!
Notes:
Store in the fridge for up to 1 week or freeze for longer storage.
