Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Toss cauliflower florets with olive oil, smoked paprika, salt, and pepper. Spread evenly on the baking sheet.
Roast for 20–25 minutes, flipping halfway through, until golden and crispy on the edges.
While the cauliflower roasts, heat a grill pan or nonstick skillet over medium heat. Grill halloumi slices for 2–3 minutes per side until golden.
Remove cauliflower from the oven, drizzle with honey and lemon juice, and toss gently to coat.
Plate roasted cauliflower with grilled halloumi. Garnish with parsley if desired and serve immediately.
