Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
Grease a muffin tin with olive oil or non-stick spray.
2. Prepare the Ham Cups:
Lay one slice of ham in each muffin tin cup, gently pressing to form a cup shape.
3. Add Cheese and Eggs:
Sprinkle a small amount of shredded mozzarella into the bottom of each ham cup.
Crack one egg into each cup, keeping the yolk intact.
Season with salt and pepper to taste.
4. Bake the Breakfast Cups:
Place the muffin tin in the preheated oven.
Bake for 12–15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
5. Garnish and Serve:
Let the breakfast cups cool for a few minutes after baking.
Garnish each with a sprinkle of chopped fresh parsley for added flavor and color.
