Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.

Mix wet ingredients: In a large bowl, beat the eggs, sugars, and oil until smooth. Stir in vanilla and mashed bananas.

Combine: Gradually add the dry ingredients to the wet ingredients and mix just until combined.

Add tropical flavors: Fold in crushed pineapple, shredded coconut, and nuts (if using).

Bake: Pour batter into prepared loaf pan and smooth the top. Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

🌴 Tips:
For extra flavor, lightly toast the coconut and nuts before adding them to the batter.

Add ½ teaspoon of almond extract for another tropical note.

Can be made into muffins—bake at 350°F for 18–22 minutes.
