Delicious and creamy spinach and cheese puff pastry pie 😋

Filling Preparation
Prepare the spinach: If using fresh spinach, wash it well. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the spinach and sauté until wilted. If using frozen spinach, thaw and drain well (this is essential to prevent the filling from becoming watery!).

Onion crust: In the same skillet (adding 1 more tablespoon of olive oil if necessary), sauté the chopped onion over medium heat until translucent, about 5 to 7 minutes. Add the crushed garlic and sauté for 1 minute more, until fragrant.
Filling: Place the ricotta in a large bowl. Add the drained spinach, the sautéed onion and garlic mixture, the crumbled feta cheese (or other grated cheese), and the eggs. Seasoning: Season generously with salt, freshly ground black pepper and a pinch of nutmeg. Mix everything well until you have a smooth, creamy filling. 2. Assembling the Pie
Preparing the Pastry: Preheat the oven to 350°F (180°C). Lightly grease the pan with butter or oil.

Bottom Layer: Puff pastry usually comes in two sheets. Unroll one sheet and carefully place it in the pan, leaving the sides overhanging. Press it lightly into the bottom and sides of the pan.

Filling: Place the spinach and cheese filling on the bottom sheet of puff pastry and spread evenly.

Top Layer: Place the other sheet of puff pastry on top of the filling. Trim off the excess puff pastry and seal the edges of both layers with your fingers. You can also make a decorative pattern around the edges with a fork.

Topping: In a small bowl, mix the egg yolk with 1 tablespoon of milk. Brush the top of the pie with this mixture. This will give it a nice golden color.

Venting: Poke a few holes in the top of the pie with a fork to allow steam to escape during baking. 3. Bake
Place the assembled pie in the preheated oven.

Bake for 30 to 40 minutes or until the pastry is golden brown and the filling is set. The exact time will depend on your oven and the thickness of the pie.

Serve
Remove the pie from the oven and let it rest in the pan for 5 to 10 minutes before slicing. This will make it easier to cut and the filling will firm up.

Serve hot or warm. Great on its own or with a fresh salad.
