Steps of preparation
1. In a bowl, mix the flour, chemical yeast, salt, pepper and dried herbs.
2. Incorporate the grated cheese into a dry mixture.
3. 3. In another bowl, beat the egg with the milk. Gradually pour this wet mixture into the bowl, stirring until a homogeneous paste (a little thick, but supple).
4. On a floured work surface, spread the dough about 5 mm thick. Cut it into squares, then cut each square in half to form triangles.
5. Heat the frying oil in a saucepan or deep fryer at about 170oC.
6. Gently plunge the triangles into the hot oil (in several ovens if necessary) and let them fry until golden (1 to 2 minutes on each side).
7. Drain on absorbent paper to remove excess oil. Serve immediately, as long as it is warm.
Tip to facilitate the recipe
To prevent the dough from sticking, keep your hands slightly floured and regularly check that the work surface is well floured.
An ingredient to be exchanged
Replace the grated cheese with ricotta or broken honeyed cheese for a different taste and a more melting texture.
Cooking tip
If you prefer to avoid frying, you can bake these triangles in the oven: place them on a plate covered with baking paper, brush them lightly with oil and bake them at 200oC for 10 to 12 minutes, until they are golden.
