– 150g crushed speculoos biscuits
– 150g dark chocolate
– 200g grated pears (about 2 medium pears)
– 100g sugar
– 150g flour
– 3 eggs
– 1 sachet baking powder
– 100g melted butter
– A pinch of salt
Instructions: 1. Preheat your oven to 180°C (350°F) and prepare a loaf pan by lining it with parchment paper.
2. In a large bowl, whisk the eggs and sugar until light and fluffy.
3. Add the melted butter and mix gently.
4. Stir in the grated pears and mix until well coated. 5. In another bowl, sift the flour with the baking powder and a pinch of salt. Gradually add this dry mixture to the wet mixture.
6. Melt the dark chocolate in a bain-marie or in the microwave, then fold it into the mixture while stirring well.
7. Add the crushed speculoos biscuits and gently mix to form a smooth batter.
8. Pour the batter into the prepared pan and smooth the top with a spatula.
9. Bake for approximately 40-45 minutes, or until a toothpick inserted in the center comes out clean.
10. Once baked, let the cake cool for a few minutes before carefully removing it from the pan.
