In a saucepan, heat milk until just beginning to steam.
In a separate bowl, whisk together sugar, cornstarch, and egg yolks.
Slowly pour half the hot milk into the egg mixture, whisking constantly (tempers the eggs).
Pour back into saucepan. Cook over medium heat, whisking constantly until thickened (about 2–4 minutes).
Remove from heat. Stir in butter and vanilla.
Cover with plastic wrap (touching the surface to prevent a skin from forming) and chill until cold.
🍽 To Assemble:
Slice the top third off each puff or poke a hole in the bottom.
Fill with pastry cream using a spoon or piping bag.
Replace tops (if sliced) and dust with powdered sugar or drizzle with chocolate ganache.
