Step 1: Prepare the Pan
Preheat oven to 350°F (175°C).
Place paper cupcake liners in each of the 12 cups of a muffin pan.
Step 2: Make the Cream Cheese Filling
In a mixing bowl, beat the softened cream cheese until fluffy.
Add sugar and vanilla; beat well.
Add eggs one at a time, beating well after each addition.
Step 3: Assemble the Tarts
Place one vanilla wafer, flat side down, into the bottom of each muffin cup.
Spoon the cream cheese mixture over the wafers, filling each cup to about ¼ inch from the top.
Step 4: Bake
Bake for 20 minutes.
Tarts will puff up while baking but will sink in the center as they cool — creating the perfect well for your topping.
Step 5: Cool and Fill
Let the tarts cool completely.
Top each with a spoonful of cherry or blueberry pie filling.
Step 6: Chill and Serve
Refrigerate the tarts thoroughly before serving.
