Carefully remove the dorsal vein from each prawn, keeping the heads and shells. This will enhance the flavour when cooking.
Preparing the garlic and parsley butter:
In a bowl, mix the softened butter with the minced garlic, parsley, lemon juice, a pinch of salt and pepper. This mixture will form the basis of the intense flavour of your prawns.
Preparing the grill:
Preheat a barbecue to medium-high heat or a grill pan to medium-high heat. Lightly oil the grill grates or pan to prevent the prawns from sticking.
Grilling the prawns:
Generously brush each prawn with the garlic and parsley butter mixture.
Place the prawns on the hot grill and cook for about 3 to 4 minutes on each side, until they are golden brown, crispy on the surface and juicy on the inside.
Plating and serving:
Transfer the grilled prawns to a serving dish, drizzle with the remaining melted garlic butter, and serve with lemon wedges for a tangy touch.
Serve with rice, salad, or grilled vegetables for a balanced and delicious summer meal.
