Cod and Shrimp Stew

Preparing the vegetables:
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, then sauté for 2 to 3 minutes, until softened and lightly browned.
Adding the vegetables:
Stir in the sliced ​​peppers and diced tomatoes. Simmer for about 5 minutes, until the vegetables begin to soften.
Deglaze with white wine:
Pour the white wine into the skillet and let it reduce by half. This helps concentrate the wine’s flavors while adding a nice acidity to the sauce.
Adding the
fish stock and tomato paste to the skillet. Stir well to dissolve the paste, then simmer gently for about 10 minutes. This will allow the sauce to thicken and the flavors to develop.
Cooking the cod:
Cut the cod into medium-sized pieces and add them to the pan. Cook gently for about 5 minutes, until the fish is opaque and cooked through.
Adding the shrimp:
Stir the peeled shrimp into the pan. Simmer for another 3 to 5 minutes, until the shrimp turn pink and the cod is tender.
Seasoning and serving:
Season with salt, pepper, and freshly chopped parsley. Serve this delicious stew piping hot with white rice, pasta, or even steamed potatoes for a complete meal.
