Chocolate Covered Sponge Cake

Preheat oven to 180°C (350°F). Grease and line a cake pan with parchment paper.
Make the sponge cake:
Beat eggs and sugar until pale and fluffy.
Sift in flour and baking powder, then gently fold in.
Add vanilla extract and mix until smooth.
Pour batter into the pan and bake for 20-25 minutes.
Let the cake cool completely.
Prepare the chocolate coating:
Heat the cream until warm (but not boiling).
Add chopped chocolate and butter, stirring until smooth.
Cover the cake:
Place the cake on a wire rack and pour the chocolate over the top.
Let it set in the fridge for about 30 minutes.
