For the kabobs:
1½ lbs (680g) boneless, skinless chicken breast or thighs, cut into 1.5-inch chunks
2 cups fresh pineapple chunks
1 red bell pepper, chopped into 1.5-inch pieces
1 green bell pepper, chopped
1 red onion, chopped (optional but recommended)
Skewers (wooden or metal)
For the marinade:
¼ cup soy sauce
2 tbsp honey or brown sugar
2 tbsp olive oil
2 tbsp pineapple juice (or orange juice)
1 tbsp rice vinegar or lime juice
2 garlic cloves, minced
½ tsp ground ginger
½ tsp black pepper
Optional: pinch of red pepper flakes or hot sauce for a kick
