Season chicken breasts with salt, black pepper, and smoked paprika (if using). Set aside.
3. Make the garlic tomato sauce:
Heat the olive oil in a large ovenproof skillet over medium heat.
Add the minced garlic and cook until fragrant, about 30 seconds.
Stir in the diced tomatoes, chicken broth (or wine), Italian seasoning, and red pepper flakes (if using). Simmer for 5 minutes to allow the flavors to meld.
4. Assemble the dish:
Place the chicken breasts in the skillet and spoon some tomato sauce over each piece.
Spread the mozzarella and Parmesan evenly over the chicken.
5. Bake:
Place the skillet in the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted and bubbly.
6. Garnish and serve:
Remove the skillet from the oven and let the chicken rest for 5 minutes.
Garnish with fresh basil or parsley and serve warm
