Cheddar Crusted Ground Beef and Rice Casserole

Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
Stir in the garlic powder, salt, and black pepper.
Add the uncooked rice to the skillet and stir to combine with the beef mixture.
Pour in the beef broth and cream of mushroom soup, stirring until everything is well mixed.
Transfer the mixture to a greased 9×13 inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the top.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
Let the casserole cool for a few minutes before serving.

For a bit of spice, you can add a teaspoon of chili powder or a pinch of cayenne pepper to the beef mixture. If you have picky eaters, consider using ground turkey or chicken instead of beef. You can also add vegetables like bell peppers or peas for extra nutrition. For a creamier texture, try mixing in a half cup of sour cream before baking.
