Here is a simple recipe that you can make with store-bought puff pastry, so it will be even faster:

Ingredients:

For the dough:
1 package (approx. 275-300 g) of ready-made puff pastry
(alternative: homemade shortcrust pastry, if you have the time and inclination)
For the filling:
2-3 medium-sized tomatoes (or 1-2 handfuls of cherry tomatoes)
200-250 g mozzarella (preferably fresh, ball-shaped mozzarella, but block mozzarella is also good)
1/4 cup (approx. 60 ml) basil pesto (homemade or store-bought)
A handful of fresh basil leaves (for decoration and extra flavor)
Extra virgin olive oil
Salt, freshly ground black pepper
Optional: a little balsamic vinegar for serving

Prepare the tomatoes (optional, but recommended to avoid soggy fruit):
Cut the tomatoes into thin slices or halve the cherry tomatoes.
Place them on a tray lined with paper towels and sprinkle lightly with salt. Leave to stand for 10-15 minutes to allow the juices to drain. This will help prevent the pie crust from getting soggy. Then carefully blot up any remaining moisture with a clean paper towel.
