Caprese and Avocado Mousse

Ingredients
(Makes 12 canapés)

1. Base:
– 12 slices mini shokupan loaf(or brioche, lightly toasted)
– 1 ripe avocado (for mousse)
– 1 tbsp crème fraîche (or Greek yogurt)
– ½ tsp lemon juice
– Salt & white pepperto taste

2. Caprese Topping:
– 12 mini buffalo mozzarella balls
(ciliegine, sliced into 5mm discs)
– 12 ripe cherry tomatoes
(halved, seeds gently scooped out)
– 12 fresh basil leaves (micro basil for elegance)

3. Finishing Touches:
– Aged balsamic glaze (reduced to syrup)
– Extra-virgin olive oil (best quality)
– Edible pansies (or violas)
– Flaky sea salt (Maldon)
