CANDIED LEMON AND GINGER CANDIES

INGREDIENTS:

250g sugar
100ml water
2 untreated lemons
50g fresh ginger, peeled and thinly sliced
Additional sugar for coating

STEP 1: PREPARE THE LEMONS

Wash the lemons: Wash the lemons thoroughly under running water to remove any impurities. Cut them into wedges, removing the seeds.

STEP 2: MAKE THE SYRUP

Prepare the syrup: In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar is completely dissolved.

STEP 3: COOKING THE LEMONS AND GINGER

Add the lemons and ginger: Add the lemon wedges and ginger slices to the boiling syrup. Reduce the heat and simmer for about 30 minutes, until the fruit is tender and translucent.

STEP 4: DRY AND COAT

DRAIN THE FRUIT: Remove the lemons and ginger from the syrup and place them on a wire rack to cool and dry for about 1 hour.

Coat with sugar: Once the fruit has cooled, coat it generously with additional sugar.
