1. Prepare the batter
Peel, core, and dice the apples.
Mix flour, baking powder, salt, cinnamon, and nutmeg in a bowl.
In a separate bowl, combine eggs, sugar, vanilla, milk, and melted butter.
Stir in the dry ingredients, then gently fold in the apple pieces.
2. Fry
Heat oil in a large pot or deep fryer to about 175°C (350°F).
Using a large spoon or ice cream scoop, drop batter into the hot oil (not too much at once!).
Fry for about 2-3 minutes per side, until golden brown and cooked through.
Drain on paper towels.
3. Prepare the Glaze
Mix powdered sugar with milk (or apple juice) and vanilla until smooth.
Dip warm fritters or brush generously with the glaze.

For extra crunch: Briefly fry apple cubes in butter with a little sugar and cinnamon before adding them to the batter.
Variations: Raisins or chopped walnuts in the dough add even more texture.
Storage: Best enjoyed fresh – but they’ll keep for 1-2 days if stored in an airtight container. Quickly reheating makes them delicious again.
