Better than meat! Few people cook cabbage like this.

Step 1: Prepare the cabbage. We’ll start by preparing the cabbage. Take a whole cabbage, about 400g in weight, remove the tough outer leaves, and cut it into smaller pieces. Heat 200ml of boiled water and pour it over the chopped cabbage in a large bowl. Cover the bowl and let it sit for 15 minutes. This allows the cabbage to soften slightly. Then, drain the cabbage well to remove any excess moisture. This step is important to ensure the final dish isn’t too watery.

Step 2: Prepare the Vegetables While the cabbage rests, let’s prepare the other vegetables. Peel and chop the three onions into small pieces. Step 4: Add the Eggs and Spices. In a large bowl, beat three eggs. Stir in the salt, black pepper, cumin, and thyme. Mix well until smooth. Next, add the drained cabbage to the egg and spice mixture, mixing thoroughly to ensure the cabbage is well coated.

Step 5: Add the Cheese and Flour. To the cabbage, egg, and spice mixture, add 250g of grated mozzarella and 150g of flour. The mozzarella will add a melting, flavorful texture to your dish. Mix all the ingredients well until they are well incorporated and the dough is smooth.

Step 6: Prepare the Pots. We will bake this mixture in individual pots. Take small pots or ramekins and grease them with a little vegetable oil to prevent the mixture from sticking. Fill each jar with the cabbage mixture, making sure each portion is well compacted.
Step 7: Bake Preheat your oven to 180°C (350°F). Place the jars in the oven and bake for about 35 minutes. You’ll see the mixture puff up and brown slightly. This is when the magic happens and all the flavors blend perfectly.

Step 8: Add the grated cheese Five minutes before the end of baking, grate an additional 50g of cheese, preferably one that melts well, like Gouda or Cheddar. Sprinkle it over the top of each jar so it melts and creates a golden, flavorful crust.

Step 9: Serve and enjoy Once baking is complete, remove the jars from the oven and let them cool for a few minutes before serving. This dish is perfect with a green salad or grilled vegetables for a complete meal. You’ll be surprised by the sweetness and richness of the cabbage, which pairs perfectly with the herbs and melted cheese.
