Beetroot salad

⭐ Ingredients:
2–3 medium beetroots, boiled or roasted, peeled, and sliced or grated

1 small red onion, thinly sliced (optional)

1–2 tbsp fresh lemon juice or balsamic vinegar

2 tbsp olive oil

Salt and black pepper to taste

1–2 tbsp fresh herbs (parsley, dill, or mint), chopped

Optional:

Crumbled feta cheese or goat cheese

A handful of walnuts, pumpkin seeds, or sunflower seeds

A few slices of orange or apple for sweetness

A handful of arugula or baby spinach for extra greens
