Slice bananas into 1/2-inch rounds and place on a parchment-lined tray.
Freeze for about 15–20 minutes to firm up.
Melt dark chocolate and coconut oil together in the microwave (30-second intervals, stirring in between) or on the stovetop using a double boiler.
Dip each banana slice halfway into the melted chocolate. Let excess drip off.
Sprinkle with toppings of your choice while the chocolate is still wet.
Return to tray and freeze for another 30–60 minutes until firm.
