1. Bake the Cabbage Nests
Preheat oven to 200°C (top/bottom heat).
Mix the cabbage, eggs, cheese, onion, mustard, salt, pepper, and nutmeg well in a bowl.
Line a baking sheet with parchment paper and lightly grease it.
Form 4 “nests” from the cabbage mixture (about 10–12 cm in diameter, with a small hollow in the center).
Bake for about 20–25 minutes, until golden brown and slightly crispy.
2. Prepare the Burger Patties
Mix the ground beef with the spices and mustard and form into 4 patties.
Fry in a pan with a little oil or grill – depending on the desired doneness.
Optionally, top with cheese just before cooking and let it melt.
3. Assemble the burgers
Place a patty on each cabbage nest, then top with toppings as desired.
If you like, add another “nest” as a lid – or enjoy it open like a burger plate.

Low-carb & keto: Perfect without bread – optionally top with extra cheese or avocado.
Vegetarian: Replace with a lentil, mushroom, or halloumi patty.
Meal prep: The nests are easy to precook and freeze.
