Baked Broccoli and Chicken Cheese Balls
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the shredded chicken, chopped broccoli, cheddar cheese, breadcrumbs, eggs, minced garlic, onion powder, salt, pepper, and paprika.
Mix everything together until well combined. The mixture should be able to hold together when pressed.
Using your hands, form the mixture into small balls, about the size of a golf ball, and place them on the prepared baking sheet.
Lightly spray the balls with olive oil spray to help them crisp up in the oven.
Bake for 20-25 minutes, or until the cheese balls are golden brown and cooked through.
Allow to cool for a few minutes before serving.
Variations & Tips
For a different flavor profile, you could replace the cheddar cheese with mozzarella or pepper jack. If you’re looking to make these gluten-free, swap the breadcrumbs for a gluten-free version or even some crushed gluten-free crackers. Also, feel free to experiment with adding other veggies like finely chopped red bell pepper or spinach to pack in more nutrients.
