Bacon-Wrapped Cheese and Ham Stuffed Meatloaf with Potato Salad

This decadent meatloaf, wrapped in bacon and stuffed with cheese and ham, is paired with a refreshing potato salad. Perfect for a hearty dinner or a special occasion, this meal is sure to impress.

Ingredients:

For the Meatloaf:

1.5 kg minced pork
30 g salt
1 tsp pepper mixture
1 tsp dry garlic
1 tsp Italian herb mixture
1 onion, grated and excess juice strained
1 egg
3 tbsp ground crackers
70 ml cream (20% fat)
300 g cheese, grated
300 g ham, sliced
20-30 strips of cooked and smoked bacon (depending on the width of the bacon strips)
For the Potato Salad:

3 potatoes
Water (to cover potatoes)
1 tsp salt (for boiling potatoes)
1 red onion, thinly sliced
1 tsp salt (for marinating onions)
1 tbsp sugar
2 tbsp lemon juice
3 pickled cucumbers, chopped
Dill and parsley to taste
Salt and black pepper to taste
1 tsp Dijon mustard
3 tbsp mayonnaise
