Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare filling:
In a bowl, mix cottage cheese, diced apple, honey, cinnamon, and nutmeg.
If you like a smoother filling, you can lightly mash the cottage cheese.
Assemble pastries:
Cut puff pastry into squares (about 4×4 inches).
Place a spoonful of the filling in the center of each square.
Fold into triangles or rectangles, and press edges with a fork to seal.
Brush the tops with beaten egg for a golden finish.
Bake:
Bake for 15–20 minutes or until golden brown and puffed.
Cool & serve:
Let cool slightly, then dust with powdered sugar if desired. Enjoy warm!
