Ingredients

150 g of amaretti
500 ml of fresh whipping cream
4 eggs (separated into yolks and whites)
100 g of sugar
1 tablespoon of amaretto liqueur (optional)
Whole amaretti and chopped almonds for decoration
Instructions
Preparation of the base:

Finely crumble the amaretti with a mixer or by crushing them manually.
In a bowl, beat the egg yolks with the sugar until the mixture is light and frothy.
Assembling the egg whites and cream:

Beat the egg whites until stiff.
In another bowl, whip the fresh cream until it becomes firm.
Mixing the ingredients:

Add the whipped egg yolks to the crushed amaretti biscuits, gently incorporating the amaretto liqueur, if desired.
Add the whipped egg whites to the mixture and then the cream, mixing from the bottom up so as not to deflate the mixture.
Assembly:

Pour the mixture into a plumcake mold lined with cling film or into individual molds.
Level the surface with a spatula and cover with cling film.
Freezing:

Place the semifreddo in the freezer for at least 6 hours or until it is solid.
Serving and Storage Tips
Serving: Remove the semifreddo from the freezer about 10 minutes before serving to make it easier to cut. Decorate with whole amaretti biscuits, chopped almonds or a dusting of bitter cocoa.
Storage: You can store the semifreddo in the freezer, well covered, for up to 7-10 days.
