Preparation:
Prepare the sausage filling:
Put the minced sausage meat in a bowl. Add the finely chopped onion, garlic, thyme, mustard, salt and pepper. Mix everything well so that the flavours blend well. You can also add extra spices to taste, such as paprika or nutmeg.
Prepare the puff pastry:
Place the puff pastry on a clean work surface. If you have a large sheet of puff pastry, cut it in half to make two rectangular pieces (depending on the size of the roll you want to make).
Shape the sausage roll:
Spread the sausage filling down the middle of the puff pastry. Shape the mince into a long roll that is approximately the length of the pastry. Make sure you don’t use too much filling, so that the pastry can close properly.
Roll up the puff pastry:
Fold the sides of the puff pastry inwards and roll the pastry tightly around the sausage filling, so that the seam is at the bottom. Press the edges well so that the roll doesn’t open up during baking.
Cut the roll into portions:
Cut the large sausage roll into smaller pieces, depending on how large you want the sausage rolls to be (usually between 4-6 pieces per roll).
Brush with egg:
Break the egg in a small bowl and brush the top of each sausage roll with a thin layer of egg to give them a nice golden brown colour when baking.
Baking:
Preheat the oven to 200°C (180°C for a fan oven). Place the sausage rolls on a baking tray lined with baking paper. Bake for about 20-25 minutes, or until golden brown and crispy.
Serving:
Allow the sausage rolls to cool slightly and serve warm or at room temperature. They are delicious with a little mustard or chutney as a dip!
