In a bowl, beat the eggs and add the milk. Then stir in the flour until you have a smooth batter. Add salt and pepper to taste.
Fry the courgettes:
Heat a little olive oil in a large frying pan. Dip the courgette slices in the batter and carefully place them in the hot oil. Fry them on both sides until golden brown and crispy (about 3-4 minutes per side).
Finishing:
Once the courgettes are done, place them on a plate and sprinkle with the finely chopped garlic and fresh dill or parsley. This gives the dish a fresh, aromatic flavour.
Serving:
Serve the fried courgettes immediately, possibly with a yoghurt or garlic sauce on the side. They are perfect as a side dish, starter or even as a main course with a salad.
Tip:
For an extra tasty variation, you can sprinkle a little grated Parmesan cheese over the courgettes just before you remove them from the pan.
