🧑‍🍳 Preparation:<!–nextpage–>
1️⃣ Preparation of the dough:
In a large bowl, mix the flour, the salt, sugar and yeast.
Add warm milk, water and olive oil. Knead the dough by hand or in a food processor until smooth and elastic.
Cover the bowl with a clean cloth and let it sit for 1 hour, until the dough has doubled in volume.
2️⃣ Preparation of the filling:
Boil the potatoes in salted water, drain and mash until smooth.
Add butter, coriander, salt, pepper and paprika. Mix everything well together until you have a tasty filling.
3️⃣ Forming the bread:
Divide the risen dough into 4 parts. Roll each part out into a round cake about 1 cm thick.
Place a portion of potato filling in the center of each pancake and carefully fold the edges over to seal them.
Carefully roll out the formed balls to a thickness of about 1.5 cm.
4️⃣ Baking or frying:
Brush the top of the pancakes with olive oil and sprinkle with black cumin or sesame seeds.
Bake in a preheated oven at 200°C for 20-25 minutes, until golden brown.
Alternative: Fry in a dry, hot pan for 3-4 minutes on each side until golden brown.
