Hawaiian Tropical Chicken on a Skillet
Ingredients:
2 chicken breasts, boneless and skinless
1 cup pineapple chunks (fresh or canned)
1 red bell pepper, sliced
1/2 red onion, sliced
2 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon chili flakes (optional)
Salt and pepper to taste
Fresh cilantro for garnish (optional)

Preheat oven to 400°F (200°C).
In a small bowl, whisk together olive oil, soy sauce, honey, garlic powder, ground ginger, chili flakes, salt and pepper.
Place chicken breasts on a skillet. Drizzle marinade over chicken and turn to coat evenly.
Add pineapple chunks, red pepper, and onion slices to pan around chicken.
Roast for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
Garnish with fresh cilantro before serving for an extra burst of flavor.
