For the chicken:

6 chicken legs (drumsticks), skin-on

1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar/lemon juice)

1 tsp salt

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp paprika (optional: smoked)

1/4 tsp cayenne pepper (optional, for heat)

For the coating:

1 1/2 cups all-purpose flour

1/4 cup cornstarch (for extra crispiness)

1 tsp salt

1/2 tsp pepper

1/2 tsp paprika

1/2 tsp garlic powder

1/4 tsp baking powder (helps crisp)

For frying:

Vegetable oil (enough to deep fry, like peanut, canola, or sunflower)

🔪 Instructions:
1. Marinate the Chicken (Recommended: 4+ hours or overnight):
Mix buttermilk with salt, pepper, garlic powder, paprika, and cayenne.

Add chicken legs and coat well.
