4 thin veal escalopes

200g (7 oz) sausage meat or ground pork

1 small onion, finely chopped

1 clove garlic, minced

1 tbsp fresh parsley, chopped

1 tbsp breadcrumbs

Salt and pepper

Olive oil

Butcher’s string or toothpicks

For the sauce:
1 glass dry white wine

200ml (3/4 cup) veal or chicken stock

1 tbsp tomato paste or 2 fresh tomatoes, chopped (optional)

1 tbsp flour

1 tbsp butter
