Couette: Peel the apple and grate it on a coarse grater. Squeeze the juice and pour it into a bowl. Add the skyr, horseradish, and salt and pepper to taste. Mix well. Place the couverture in the refrigerator for about 15 minutes to allow the flavors to blend.
Meanwhile, hard-boil the eggs, peel them, and cut them in half. Remove one yolk and mash it with a fork.
