How to store honey to preserve all its qualities?

When we think of a food that can survive the centuries without deteriorating, honey often comes first. It’s not a myth: perfectly edible honey has been found in Egyptian tombs that are more than 3,000 years old. But be careful, this does not mean that it can be stored in any way. Honey is resistant, but its texture, flavour and therapeutic properties can deteriorate if the storage conditions are not respected. And frankly, it’s always a little pleasure to open a jar and find exactly the same taste that we’ve loved for years. So, how do you keep it as delicious as it was on day one?

The secret to the longevity of honey lies in its composition. With a very high sugar content and very low water activity, it creates a hostile environment for microorganisms. In other words, bacteria and mould do not find the necessary conditions to grow. Add to that an acidic pH and enzymes with antimicrobial properties – such as glucose oxidase – and you have a real natural preservative. But be careful, over time, it can crystallize and go from a golden liquid to a grainy paste, less pleasant to spread if you don’t expect it. In this case, it is often enough to place it in a double boiler for a few minutes for it to regain its fluid texture.However, just because it doesn’t “rot” doesn’t mean that honey is immune to spoilage. It can also lose some of its aromas, or even ferment if certain basic rules are not followed.

The right container: why glass is still the best option
The choice of container plays a crucial role. Many store their honey in the original plastic jar, without paying attention. It’s convenient, yes, but not ideal in the long run. However, glass is the most reliable material for long-term preservation. It does not release substances that can migrate into the honey, it is airtight, and above all, it is resistant to temperature variations. And let’s face it, a pretty transparent glass jar, with this golden honey inside, immediately makes you want a slice of bread! Conversely, plastic can degrade over time, especially if exposed to heat or light. This can alter not only the organoleptic quality of the honey, but also its beneficial properties.
