🧂 Ingredients
🥧 For the Sweet Tart Crust (Pâte Sucrée):
1 1/4 cups (160g) all-purpose flour

1/2 cup (60g) powdered sugar

1/4 tsp salt

1/2 cup (115g) unsalted butter, cold and cubed

1 large egg yolk

1–2 tsp ice water (if needed)

🍫 For the Chocolate Ganache Filling:
8 oz (225g) dark chocolate (60–70%), finely chopped

1 cup (240ml) heavy cream

2 tbsp unsalted butter

1 tsp pure vanilla extract

Pinch of salt

🍓 For the Topping:
1½–2 cups fresh raspberries

Optional: mint leaves, edible gold leaf, or powdered sugar for garnish

✨ Optional Chocolate Glaze (for shine):
3 oz (85g) dark chocolate, chopped

1/3 cup (80ml) heavy cream

1 tsp corn syrup (for shine)
