Christophe Michalak’s Valbonnaise Tart: Almond and Lemon Zest Delight ๐Ÿ‹๐ŸŒฐ

๐Ÿ“‹ Ingredients (Serves 8 to 10):

โ–ช๏ธ For the shortbread:

๐Ÿ”ธ 30g icing sugar
๐Ÿ”ธ 2 pinches of salt
๐Ÿ”ธ 2 pinches of fleur de sel
๐Ÿ”ธ 100g flour
๐Ÿ”ธ 20g cornstarch
๐Ÿ”ธ The zest of 1 lemon (yellow or green, according to your taste)
๐Ÿ”ธ 1 vanilla pod (seeds)
๐Ÿ”ธ 100g butter
โ–ช๏ธ For the almond paste:

๐Ÿ”ธ 120g almond flour
๐Ÿ”ธ 60g icing sugar
๐Ÿ”ธ 3 tbsp orange marmalade (or apricot jam for a sweeter version)
๐Ÿ”ธ 1 tbsp. orange blossom water
๐Ÿ”ธ 1 pinch of fleur de sel

๐Ÿ”ธ 20 g caster sugar
๐Ÿ”ธ 100 g icing sugar
๐Ÿ”ธ 100 g almond flour
