20–24 large button mushrooms (or cremini), stems removed and cleaned
½ pound Italian sausage (sweet or spicy), casing removed
¼ cup onion, finely chopped
2 cloves garlic, minced
¼ cup cream cheese, softened
¼ cup grated Parmesan cheese
½ cup shredded mozzarella cheese (optional)
¼ cup breadcrumbs (preferably panko for crunch)
2 tablespoons fresh parsley, chopped (plus more for garnish)
Salt and pepper to taste
2 tablespoons olive oil (for greasing the pan)
