Introduction: Ever have one of those meals that’s so good, you can’t help but make it over and over again? That’s exactly how I feel about this dish! After making it for the third time in a week, it’s clear that this recipe has earned its spot in my regular cooking rotation. Not only is it delicious, but it’s also quick and easy to prepare, making it perfect for busy days when you still want a home-cooked meal. If you’re looking for a dish that hits all the right notes and won’t leave you scrambling for new ideas every night, this is the one for you!
Ingredients:
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 pound chicken breast (or tofu for a vegetarian option), cubed
1 cup diced tomatoes (canned or fresh)
1/2 cup chicken broth (or vegetable broth)
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper, to taste
1 cup cooked rice (white or brown)
Fresh parsley or cilantro for garnish
Directions:
Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 3-5 minutes.
Add the minced garlic and cook for another 1 minute until fragrant.
Add the cubed chicken (or tofu) to the skillet and cook until browned on all sides, about 7-10 minutes.
Stir in the diced tomatoes, chicken broth, oregano, cumin, paprika, salt, and pepper. Bring the mixture to a simmer and cook for an additional 5 minutes, allowing the flavors to combine.
While the sauce simmers, prepare the rice according to package instructions if you haven’t already.
Once the sauce has thickened slightly, remove the skillet from heat. Serve the dish over the cooked rice.
Garnish with fresh parsley or cilantro before serving.
