🥧 Cheese Soufflé Quiche

Airy, cheesy, and wonderfully aromatic!

🛒 Ingredients for 1 quiche dish (26–28 cm Ø):
For the quiche crust (slightly crumbly):
250 g flour

125 g cold butter (diced)

1 egg

½ tsp salt

1–2 tbsp cold water

For the cheese soufflé filling:
40 g butter

40 g flour

300 ml milk (warm)

4 eggs (separated)

150 g grated cheese (e.g., Gruyère, Emmental, or Bergkäse)

50 g Parmesan cheese (freshly grated)

Salt, pepper, nutmeg

Optional:
1 small onion or shallot, finely diced

Fresh thyme or chives

A little crème fraîche or sour cream (for extra creaminess)
