Marinate the Chicken:In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add the chicken strips, toss to coat, and marinate for at least 30 minutes (or up to 2 hours for extra flavor).
Prepare the Tzatziki Sauce:In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill (or mint), lemon juice, salt, and pepper. Stir until well mixed, then cover and refrigerate until ready to serve.
Cook the Chicken:Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken strips and cook for 4-5 minutes on each side, or until cooked through and golden.
Assemble the Gyros:Warm the pita bread in a skillet or microwave. Spread a generous amount of tzatziki sauce on each pita, then layer with cooked chicken, tomatoes, red onions, lettuce, and a sprinkle of feta cheese if desired.
