Melt the chocolate
Place chopped chocolate in a heatproof bowl over a pan of gently simmering water (double boiler). Stir until melted. Remove from heat and cool slightly.
Flavor the chocolate
Stir in the orange zest, cinnamon, nutmeg, cloves, and a small pinch of salt.
Whip the egg yolks and sugar
In a separate bowl, whisk egg yolks with sugar until pale, thick, and creamy (about 2–3 minutes). Then mix into the melted chocolate.
Whip the egg whites
In a clean bowl, beat egg whites until stiff peaks form.
Whip the cream
In another bowl, whip the cream until soft peaks form.
Fold it all together
Gently fold whipped cream into the chocolate mixture.
Then carefully fold in the whipped egg whites in batches until fully combined and fluffy.
Chill
Spoon into serving glasses or bowls. Chill for at least 2 hours (or overnight).
Serve
Top with a dollop of whipped cream, candied orange zest, or shaved chocolate. A dusting of cocoa powder and a star anise on the plate makes it extra Christmassy.
💡 Tips
Want it boozy? Add 1 tbsp Grand Marnier or Cointreau to the chocolate after melting.
Want it egg-free? Replace eggs with more whipped cream and a bit of gelatin or use aquafaba for a vegan take.
