🍝 Quick gnocchi pan with tomato & spinach πŸ…πŸŒ±

1. Heat the olive oil in a large pan over medium heat. Peel and finely chop the garlic cloves. SautΓ© the garlic in the hot oil for about 1 minute until fragrant but not browned.

2. Halve the cherry tomatoes and add them to the pan. SautΓ© for about 3-4 minutes until the tomatoes soften and release their juices.

3. Add the gnocchi and stir well. Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer the gnocchi for about 5-7 minutes, until the gnocchi are tender and the liquid has reduced slightly.

4. Add the fresh spinach to the pan and stir until wilted. Season with salt, pepper, and chili flakes, if desired.

5. Sprinkle the grated Parmesan cheese over the gnocchi and stir briefly until melted.

6. Serve the gnocchi hot and garnish with additional Parmesan cheese, if desired.
