🍖 Homemade Meatloaf with Tomato Glaze

In a large bowl, combine all meatloaf ingredients. Mix until just combined—don’t overmix.

Shape into a loaf and place in a baking dish or on a parchment-lined baking sheet.

Mix glaze ingredients in a small bowl and spread half on top of the loaf.

Bake for 45 minutes, then spread the rest of the glaze and bake an additional 15 minutes (until internal temp hits 160°F/71°C).

Let rest 10 minutes before slicing.

🥔 Fried Potatoes with Mushrooms and Onions
Ingredients:
1 ½ lbs potatoes (Yukon Gold or Russet), peeled and diced

1 small onion, sliced

1 cup mushrooms, sliced (white or cremini)

2–3 tbsp oil or butter

Salt and pepper, to taste

Optional: garlic powder, paprika, fresh herbs like parsley

Instructions:
Parboil potatoes in salted water for 5–7 minutes until just fork-tender. Drain and pat dry.

Heat oil or butter in a large skillet over medium-high heat.

Add onions and mushrooms; sauté until softened and starting to brown (5–7 min).

Add potatoes in a single layer. Cook without stirring for a few minutes to let them crisp up.

Stir occasionally and cook until golden brown and crispy on all sides (10–15 min).

Season with salt, pepper, and any optional herbs/spices.

🍽 Serving Suggestion:
Slice the meatloaf and serve with a generous helping of crispy fried potatoes and a side of green peas or a simple salad for freshness. A drizzle of extra glaze on the side goes a long way!
