Rinse jars and lids with hot water or clean at 100°C in the oven/on a disinfectant cycle.
Make the jelly
Mix the fruit juice, gelling sugar, and lemon juice well in a large saucepan.
Bring to a boil and simmer for at least 3–4 minutes, stirring constantly. Test for settling (a drop on a cold plate – will it set?).
Add the fruit
Divide the prepared fruit into the sterile jars (up to 2/3 full). Then pour the hot jelly over them, ensuring the fruit is completely covered.
Close and cool
Immediately close the jars with screw caps and turn them upside down for about 5 minutes. Then turn them back on themselves and let them cool completely.
✅ Shelf life and storage:
Stored in a cool, dark place: shelf life of at least 6–12 months.
Once opened, refrigerate and consume within a few days.
