1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
2. In a skillet over medium heat, cook the crumbled sausage until golden brown and cooked through, about 5 to 7 minutes. Remove from heat and drain excess fat, if necessary.
3. Place the softened corn tortillas on a flat surface. Evenly distribute the scrambled eggs, cooked sausage, sundried tomatoes, diced avocado, and shredded cheese among the tortillas.
4. Wrap each tortilla tightly around the filling and place it, seam-side down, on the prepared baking sheet.
5. Lightly brush the taquitos with oil or spray them with cooking spray to crisp them up. Bake for 12 to 15 minutes, or until golden brown and crispy.
6. Let cool slightly before serving.
